It’s been quite warm here recently. Warm enough that I’ve not been sleeping too well, even with the bedroom windows wide open, and a fan on full blast all through the night. There’s no air conditioning here.
What I’ve had to keep my going though is the humble mojito. I love my mojitos. I’d love to blame Bruce Campbell in Burn Notice, but I’ve been enjoying them long before I started watching that show. I love my Mexican food. Recently, I bought Thomasina Miers’ “Mexican Food Made Simple“, which turns out to be a fantastic collection of Mexican recipes from the former winner of Masterchef and founder of Wahaca.
Over the last few weeks I’ve been trying out a fair few of the recipes form the book, and making my own adjustments for taste and availability of ingredients.
